Zucchini dough is an excellent base for pizza, croque-monsieur, salted waffles… The base of this pizza is prepared with zucchini. For the topping, everything is possible. An addictive recipe!
For the zucchini dough
.100 g organic wholemeal flour (or semi wholemeal, spelt, small spelt or a mix).1 organic egg.2 zucchinis
.pepper.dried oregano (optional)
For the garnish
.red base: tomato sauce (no added sugar or homemade).white base: yogurt with pepper.some fresh mushrooms.1/2 yellow or orange bell pepper
.1/4 broccoli.2 slices of organic white ham (or tofu with herbs).1/2 ball of mozzarella
1-Preheat oven to 220°C (th. 7). Peel and grate the zucchini in a food processor (mine grates, slices and shreds). Place the grated zucchini in a clean, dry cloth to remove as much water as possible. Press down hard.
2-In a large bowl, mix together the grated zucchini, egg, wholemeal flour, pepper and oregano until you have a smooth dough. You have your pizza dough! Roll out the dough on a baking sheet covered with baking paper. The thickness of the dough depends on your taste. (Thin in the Italian way? Thick and greedy?)
3-Bake for 20 minutes.
4-Arrange the filling on top. Be creative: add tomato sauce, vegetables, cheese, ham (or tofu)…
5-I love to use a tomato sauce base, fresh button mushrooms, yellow or orange bell pepper strips for color, broccoli… but also thin strips of organic white ham (or diced tofu with herbs) and a little mozzarella.
6.do you prefer a white base? Use 1 yoghurt, smooth it out directly in its pot with a little pepper and cumin or another spice of your choice. Spread the base before spreading your toppings.
7-Place back in the oven, still at 220°C, for 10 minutes or more depending on your toppings. Serve hot.
